How To Make Date & Buckwheat Granola with Pecans & Seeds

Not only is it healthy, granola is the perfect breakfast food when you want a recipe that’s easy and simple to whip up. Pair your granola with yogurt or snack on them like you would regular cereals to give yourself the breakfast of champions.

Ingredients

  • 1 cup buckwheat groats
  • 1 cup old-fashioned rolled oats
  • 1/2 cup chopped pecans
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup chia seeds
  • 1/4 cup flaxseeds
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1 cup chopped dates

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

  2. In a large bowl, combine the buckwheat groats, oats, pecans, pumpkin seeds, sunflower seeds, chia seeds, flaxseeds, melted coconut oil, maple syrup, vanilla extract, and sea salt. Stir well to coat everything evenly.

  3. Spread the mixture evenly onto the prepared baking sheet.

  4. Bake in the preheated oven for 20-25 minutes, or until golden brown, stirring halfway through.

  5. Remove from the oven and let cool completely.

  6. Once cooled, stir in the chopped dates.

  7. Store in an airtight container for up to 2 weeks.
