Ingredients

  • 1 cup walnuts, chopped
  • 1/2 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup flaxseeds
  • 2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp honey
  • 3/4 cup milk
  • 1/4 cup olive oil
  • 2 eggs

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf tin.

  2. In a large bowl, combine the walnuts, pumpkin seeds, sunflower seeds, flaxseeds, whole wheat flour, baking powder, and salt.

  3. In a separate bowl, whisk together the honey, milk, olive oil, and eggs. Pour the wet ingredients into the dry ingredients and stir until well combined.

  4. Pour the batter into the prepared loaf tin and smooth the top.

  5. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.

  6. Remove from the oven and allow the loaf to cool in the tin for 10 minutes. Then transfer to a wire rack to cool completely before slicing.
