Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf tin.

  2. In a large bowl, combine the pumpkin puree, vegetable oil, brown sugar, eggs, and vanilla extract. Mix until well combined.

  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Pour the batter into the prepared loaf tin and smooth the top with a spatula.

  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and allow to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
