Ingredients

  • 1 cup dates, pitted and chopped
  • 1 cup mixed nuts (almonds, walnuts, cashews), chopped
  • 1 cup rolled oats
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 1/4 cup coconut oil

Instructions

  1. Preheat the oven to 350°F (180°C). Line a baking dish with parchment paper.

  2. In a large mixing bowl, combine the dates, nuts, and rolled oats.

  3. In a small saucepan, heat the honey, almond butter, and coconut oil over low heat until melted and well-combined.

  4. Pour the honey mixture over the dry ingredients and mix well to combine.

  5. Press the mixture firmly into the prepared baking dish.

  6. Bake for 25-30 minutes or until golden brown.

  7. Allow to cool completely before cutting into bars.

  8. Store in an airtight container for up to a week.
