How To Make Date, Banana & Rum Loaf

Ingredients
- 1 cup dates, pitted and chopped
- 1 ripe banana, mashed
- 1/4 cup rum
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

In a small bowl, combine the chopped dates and rum. Let them soak for 10 minutes.

In a large mixing bowl, cream together the melted butter and brown sugar. Add the mashed banana and mix well.

Beat in the eggs, one at a time, until well combined.

In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the soaked dates (including any remaining rum).

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
