Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup plain yogurt
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.

  4. Beat in the eggs, one at a time, followed by the vanilla extract.

  5. Gradually add the dry ingredients to the butter mixture, alternating with the yogurt. Begin and end with the dry ingredients.

  6. Gently fold in the fresh blueberries.

  7. Pour the batter into the prepared loaf pan and smooth the top.

  8. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

  9. Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
