How To Make Red Bell Pepper and Corn Chowder Recipe

A creamy and hearty soup made with fresh red bell peppers and sweet corn.

Serves:

Ingredients

  • 2 red bell peppers, diced
  • 2 cups corn kernels (fresh or frozen)
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until onions are soft.

  2. Add red bell peppers and corn, continue to cook for 5 minutes.

  3. Pour in the broth, bring to a boil and then reduce heat to medium and simmer for 15-20 minutes.

  4. Remove from heat and use an immersion blender to puree the soup until smooth.

  5. Return the pot to low heat, add heavy cream and stir to combine. Season with salt and pepper.

  6. Serve hot and enjoy!
