How To Make Oxtail Stew

Ingredients
- 2 lbs oxtail
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 2 bay leaves
- 1 sprig of thyme
- 4 cups beef broth
- 1 cup red wine
- Salt and pepper to taste
Instructions

Heat the vegetable oil in a large pot over medium heat. Add the oxtail pieces and brown them on all sides. Remove the oxtail from the pot and set aside.

In the same pot, add the onion, carrots, celery, and minced garlic. Sauté until the vegetables are softened.

Return the oxtail to the pot and add the bay leaves, thyme sprig, beef broth, and red wine. Season with salt and pepper.

Bring the stew to a simmer, then reduce the heat to low. Cover the pot and let it cook for about 3 hours or until the oxtail is tender and the flavors have melded together.

Remove the bay leaves and thyme sprig before serving. Adjust the seasoning if needed.

Serve the oxtail stew hot, garnished with fresh herbs if desired.
