Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup red wine
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a shallow dish, coat the beef slices with flour, shaking off any excess.

  2. Heat olive oil in a large skillet over medium-high heat. Add the beef slices and cook until browned, about 2 minutes per side. Remove from skillet and set aside.

  3. In the same skillet, add the onion and garlic. Cook until onions are softened, about 3 minutes.

  4. Pour in the red wine and bring to a boil. Cook for 2 minutes to cook off alcohol.

  5. Stir in beef broth, tomato paste, dried thyme, salt, and pepper. Bring to a simmer.

  6. Return the beef slices to the skillet and cook for an additional 5 minutes, or until the beef is cooked to your desired level of doneness.

  7. Serve the beef in red wine sauce over mashed potatoes or with crusty bread. Garnish with fresh parsley.
