  • 1 can cannellini beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • For the Vinaigrette:
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp honey
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large bowl, combine the beans, tomatoes, cucumber, red onion, and parsley.

  2. In a separate bowl, whisk together the olive oil, red wine vinegar, honey, dijon mustard, salt, and black pepper.

  3. Pour the vinaigrette over the salad and toss to combine.

  4. Serve chilled.
