Ingredients

  • 8 oz elbow macaroni
  • 3 cups shredded cheddar cheese
  • 2 cups milk
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and set aside.

  2. In a large pot, melt the butter over medium heat. Stir in the flour and cook for 1 minute.

  3. Slowly whisk in the milk, then add the salt, black pepper, paprika, and cayenne pepper (if using). Cook, stirring constantly, until the mixture thickens.

  4. Remove the pot from heat and stir in the shredded cheddar cheese until melted and smooth.

  5. Add the cooked macaroni to the cheese sauce and mix well.

  6. Preheat the oven to 350°F (175°C).

  7. Transfer the mac and cheese mixture to a greased baking dish. Sprinkle extra shredded cheese on top if desired.

  8. Bake for 20-25 minutes, or until the top is golden and bubbly.

  9. Allow to cool for a few minutes, then serve hot.
