Ingredients

  • 2 lbs venison roast
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • salt and pepper to taste
  • 2 cups beef broth

Instructions

  1. Preheat the oven to 350°F.

  2. In a bowl, mix together garlic, olive oil, rosemary, thyme, salt, and pepper.

  3. Rub the venison roast with the mixture and place in a roasting pan.

  4. Pour beef broth into the pan and cover with foil.

  5. Bake in the preheated oven for 1 hour.

  6. Remove the foil and continue to bake for another hour or until the internal temperature reaches 145°F.

  7. Let the roast rest for 10 minutes before slicing and serving.
