Ingredients

  • 4 duck legs
  • 2 tbsp salt
  • 1 tsp black pepper
  • 4 sprigs of thyme
  • 4 cloves of garlic, crushed
  • 4 tbsp honey
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 300°F (150°C).

  2. Rub the duck legs with salt and black pepper. Place them in a baking dish with thyme and garlic.

  3. Cover the dish with aluminum foil and roast in the oven for 2 hours.

  4. Remove the foil and increase the oven temperature to 425°F (220°C).

  5. In a small bowl, mix honey and olive oil. Brush the honey mixture over the duck legs.

  6. Roast uncovered for another 15-20 minutes until the skin is crispy and golden.

  7. Serve the honey-roast confit of duck with your favorite side dishes.
