  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (14 oz) crushed tomatoes
  • 1/4 cup tomato paste
  • 1/4 cup white wine
  • 1/4 cup chopped cilantro

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Add onion, bell pepper, and garlic. Cook until softened, about 5 minutes.

  2. Stir in cumin, oregano, paprika, salt, and black pepper. Cook for an additional 2 minutes.

  3. Add crushed tomatoes, tomato paste, and white wine. Stir to combine.

  4. Reduce heat to low and simmer for 30 minutes, stirring occasionally.

  5. Remove from heat and stir in chopped cilantro.

  6. Use immediately or let cool and store in an airtight container in the refrigerator.
