Ingredients
- 1 large onion, chopped
- 1 bell pepper, chopped
- 4 cloves of garlic
- 6 plum tomatoes, diced
- 1 jalapeno pepper, seeds removed and finely chopped
- 1/4 cup of fresh cilantro, chopped
- 1 teaspoon of dried oregano
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions

Heat olive oil in a large skillet over medium heat.

Add the onion, bell pepper, and garlic to the skillet. Cook until vegetables are softened, about 5 minutes.

Stir in the diced tomatoes, jalapeno pepper, cilantro, and dried oregano. Season with salt and pepper.

Reduce heat to low and simmer for 20-25 minutes, stirring occasionally.

Remove from heat and allow the sofrito to cool slightly.

Transfer the mixture to a blender or food processor and blend until smooth.
