Ingredients

  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 4 cloves of garlic
  • 6 plum tomatoes, diced
  • 1 jalapeno pepper, seeds removed and finely chopped
  • 1/4 cup of fresh cilantro, chopped
  • 1 teaspoon of dried oregano
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add the onion, bell pepper, and garlic to the skillet. Cook until vegetables are softened, about 5 minutes.

  3. Stir in the diced tomatoes, jalapeno pepper, cilantro, and dried oregano. Season with salt and pepper.

  4. Reduce heat to low and simmer for 20-25 minutes, stirring occasionally.

  5. Remove from heat and allow the sofrito to cool slightly.

  6. Transfer the mixture to a blender or food processor and blend until smooth.

  7. Taste and adjust seasoning if necessary.

  8. Use immediately or store in an airtight container in the refrigerator for up to a week.
