Ingredients

  • 2 pounds of beef bones
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves of garlic, minced
  • 2 sprigs of fresh thyme
  • 2 bay leaves
  • 1 tablespoon of tomato paste
  • 1 cup of red wine
  • 4 cups of beef stock
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Place the beef bones in a roasting pan and roast for 30 minutes until browned.

  2. In a large pot, add the roasted bones, onion, carrots, celery, garlic, thyme, bay leaves, tomato paste, and red wine. Stir to combine.

  3. Pour in the beef stock and bring to a simmer. Skim off any impurities that rise to the surface.

  4. Reduce the heat to low and let the sauce simmer uncovered for 3-4 hours, stirring occasionally.

  5. Strain the sauce through a fine-mesh sieve, pressing down on the solids to extract all the flavors. Discard the solids.

  6. Return the sauce to the pot and simmer for an additional 30 minutes, or until it has reduced by half and thickened.

  7. Season with salt and pepper to taste.

  8. Serve the Demi-Glace sauce hot with your favorite dishes.
