How To Make Dry Red Beans in the Instant Pot®

Ingredients
- 2 cups dry red beans
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 green bell pepper, diced
- 2 stalks of celery, diced
- 4 cups vegetable broth
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp oregano
- 1 bay leaf
- Salt and pepper to taste
Instructions

Rinse the dry red beans under cold water and remove any debris or stones.

Set the Instant Pot® to sauté mode and add a little oil.

Sauté the diced onion, minced garlic, bell pepper, and celery until they are softened.

Add the dry red beans to the pot along with the vegetable broth, paprika, cumin, oregano, bay leaf, salt, and pepper.

Close the lid of the Instant Pot® and set the pressure valve to sealing.

Cook on high pressure for 45 minutes, then allow for a natural release.

Once the pressure has released, open the lid and give the beans a stir. If desired, use the back of a spoon to mash some of the beans for a creamier texture.
