Ingredients

  • 1 medium butternut squash, peeled and chopped
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 cups of vegetable broth
  • 1 cup of coconut milk
  • 1 tsp of ground cinnamon
  • 1 tsp of ground nutmeg
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic and cook until softened and fragrant, about 5 minutes.
  2. Add the butternut squash, vegetable broth, cinnamon, nutmeg, salt, and pepper. Bring to a boil, then lower the heat and let simmer for about 30 minutes, until the squash is tender.
  3. Using an immersion blender or transfering mixture to a blender, puree the soup until smooth.
  4. Stir in the coconut milk and heat for a few more minutes until hot.
  5. Serve hot, garnish with chopped herbs or seeds.
