Ingredients
- 2 acorn squash, halved and seeds removed
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup chopped pecans
- 1/4 cup grated Parmesan cheese
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, combine the olive oil, maple syrup, cinnamon, salt, and pepper.

Brush the cut sides of the acorn squash with the olive oil mixture.

Place the acorn squash halves cut side down on a baking sheet.

Roast in the preheated oven for 25 minutes.

Flip the acorn squash halves over and sprinkle with chopped pecans and grated Parmesan cheese.

Return to the oven and roast for an additional 20 minutes, or until the squash is tender and the toppings are golden brown.
