  • 1 whole turkey (approximately 12 pounds)
  • 3 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried sage


  1. Preheat the oven to 425°F (220°C).

  2. Place the turkey on a cutting board, breast side down. Use a pair of kitchen shears to cut along each side of the backbone and remove it.

  3. Flip the turkey over and press down on the breastbone to flatten it out.

  4. In a small bowl, mix together the olive oil, salt, black pepper, paprika, garlic powder, thyme, rosemary, and sage.

  5. Rub the oil mixture all over the turkey, making sure to coat both sides.

  6. Place the turkey on a rack in a roasting pan, breast side up.

  7. Roast for 1 hour, or until the internal temperature reaches 165°F (75°C) when measured with a meat thermometer inserted into the thickest part of the thigh.

  8. Remove the turkey from the oven and let it rest for 10-15 minutes before carving.

  9. Carve the turkey and serve.
