How To Make Herb-Brined Pork Chops

Ingredients

  • 4 bone-in pork chops (1 inch thick)
  • 1/4 cup kosher salt
  • 2 tablespoons brown sugar
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried sage
  • 4 cups water
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, combine kosher salt, brown sugar, dried thyme, dried rosemary, dried sage, and water. Stir until the salt and sugar dissolve.

  2. Place the pork chops in a resealable plastic bag and pour the brine over them. Seal the bag and refrigerate for at least 4 hours or overnight.

  3. Preheat the grill or a grill pan over medium-high heat.

  4. Remove the pork chops from the brine and pat them dry with paper towels.

  5. Rub the minced garlic and olive oil all over the pork chops.

  6. Grill the pork chops for about 6-7 minutes per side, or until the internal temperature reaches 145°F (63°C) for medium.

  7. Remove the pork chops from the grill and let them rest for 5 minutes before serving.
