Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 can of diced tomatoes
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 2 cups fresh spinach leaves

Instructions

  1. In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.

  2. Add the chickpeas to the pan and stir well to combine with the onion and garlic mixture.

  3. Stir in the diced tomatoes, cumin powder, paprika, chili powder, salt, and pepper. Cook for about 10 minutes, stirring occasionally.

  4. Add the fresh spinach leaves to the pan and cook until wilted, about 2-3 minutes.

  5. Serve hot with rice or bread.
