How To Make Spinach & Chickpea Curry

Ingredients
- 1 tbsp oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tbsp ginger, grated
- 2 tsp curry powder
- 1 tsp cumin powder
- 1/2 tsp turmeric
- 1/2 tsp chili powder (adjust to taste)
- 1 can (400g) chickpeas, drained and rinsed
- 1 can (400g) diced tomatoes
- 200g fresh spinach leaves
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

Heat oil in a large pan over medium heat. Add onions and cook until softened.

Add garlic and ginger to the pan, sauté for another minute until fragrant.

Stir in curry powder, cumin powder, turmeric, and chili powder. Cook for a minute to release the flavors.

Add chickpeas and diced tomatoes to the pan. Simmer for 10 minutes, allowing the flavors to blend together.

Add spinach leaves to the pan and cook until wilted.

Season with salt to taste.

Serve hot, garnished with fresh cilantro. Enjoy!
