Preparation: 30 minutes
Cooking: 20 minutes
Total: 50 minutes

Serves:

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1/4 tsp red pepper flakes
  • 8 rice paper wraps
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh mint leaves
  • 1/2 cup shredded carrots
  • 1/2 cup cucumber, julienned
  • 1/4 cup peanuts, chopped

Instructions

  1. In a bowl, combine the soy sauce, garlic, fish sauce, lime juice, honey, sesame oil, and red pepper flakes. Whisk until well combined.

  2. Cut the chicken breasts into thin slices. Place the chicken slices in a shallow dish and pour the marinade over them. Toss to coat evenly. Let the chicken marinate for at least 20 minutes.

  3. Heat a grill or grill pan over medium-high heat. Cook the marinated chicken slices for about 4-5 minutes per side, or until cooked through. Remove from heat and let cool slightly.

  4. Fill a large bowl with warm water. Dip one rice paper wrap into the water for a few seconds until it becomes pliable. Place it on a clean surface.

  5. Layer a few basil leaves, mint leaves, shredded carrots, cucumber, and a few slices of cooked chicken on the lower third of the rice paper wrap.

  6. Fold the sides of the wrap over the filling, then roll it up tightly, starting from the bottom. Repeat with the remaining wraps and filling.

  7. Serve the Vietnamese chicken wraps with a side of the dipping sauce and top with chopped peanuts.
