Serves:
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp honey
- 1 tsp sesame oil
- 1/4 tsp red pepper flakes
- 8 rice paper wraps
- 1/2 cup fresh basil leaves
- 1/2 cup fresh mint leaves
- 1/2 cup shredded carrots
- 1/2 cup cucumber, julienned
- 1/4 cup peanuts, chopped
Instructions
-
In a bowl, combine the soy sauce, garlic, fish sauce, lime juice, honey, sesame oil, and red pepper flakes. Whisk until well combined.
-
Cut the chicken breasts into thin slices. Place the chicken slices in a shallow dish and pour the marinade over them. Toss to coat evenly. Let the chicken marinate for at least 20 minutes.
-
Heat a grill or grill pan over medium-high heat. Cook the marinated chicken slices for about 4-5 minutes per side, or until cooked through. Remove from heat and let cool slightly.
-
Fill a large bowl with warm water. Dip one rice paper wrap into the water for a few seconds until it becomes pliable. Place it on a clean surface.
-
Layer a few basil leaves, mint leaves, shredded carrots, cucumber, and a few slices of cooked chicken on the lower third of the rice paper wrap.
-
Fold the sides of the wrap over the filling, then roll it up tightly, starting from the bottom. Repeat with the remaining wraps and filling.
-
Serve the Vietnamese chicken wraps with a side of the dipping sauce and top with chopped peanuts.
