Ingredients

  • 2 large yellow squash, grated
  • 1 small onion, grated
  • 2 cloves of garlic, minced
  • 1/4 cup of all-purpose flour
  • 1/4 cup of grated Parmesan cheese
  • 2 eggs, beaten
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of vegetable oil

Instructions

  1. In a large bowl, combine the grated yellow squash, grated onion, minced garlic, all-purpose flour, Parmesan cheese, beaten eggs, salt, and black pepper. Mix well.

  2. Heat vegetable oil in a skillet over medium heat.

  3. Using a spoon or ice cream scoop, scoop the squash mixture and drop it onto the hot skillet. Flatten with a spatula to form a patty.

  4. Cook each side for about 4-5 minutes, or until golden brown.

  5. Remove the cooked patties from the skillet and place them on a paper towel-lined plate to drain excess oil.

  6. Repeat the process with the remaining squash mixture until it is all used.

  7. Serve the yellow squash patties hot and enjoy!
