  • 4 large potatoes, cut into cubes
  • 2 cups cherry tomatoes
  • 4 cloves of garlic, minced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large mixing bowl, combine the potatoes, cherry tomatoes, minced garlic, chopped basil, olive oil, salt, and black pepper. Toss well to coat the ingredients evenly.

  3. Spread the potato mixture evenly onto a baking sheet.

  4. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy.

  5. Remove from the oven and let cool for a few minutes before serving.
