Ingredients

  • 6 cups mixed winter greens (such as kale, Swiss chard, and spinach)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 4 tablespoons unsalted butter
  • 1 cup breadcrumbs

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes and cook until fragrant, about 1 minute.

  3. Add the winter greens to the skillet and cook until wilted, about 5 minutes. Season with salt and pepper to taste.

  4. In a separate small skillet, melt the butter over medium heat. Cook until the butter turns golden brown and has a nutty aroma, about 3-4 minutes. Remove from heat.

  5. Stir in the breadcrumbs into the brown butter until the breadcrumbs are evenly coated.

  6. Transfer the cooked winter greens to a serving dish. Sprinkle the brown butter breadcrumbs on top.

  7. Place the dish in the preheated oven and bake for 10 minutes, or until the breadcrumbs are golden and crispy.

  8. Serve the mixed winter greens with brown butter breadcrumbs as a side dish or as a light main course.
