Ingredients

  • 4 ripe plantains
  • 4 tablespoons of butter
  • 1 cup of water
  • 1 teaspoon of salt
  • 1 red onion, thinly sliced
  • 4 slices of fried cheese

Instructions

  1. Peel the plantains and cut them into chunks.

  2. In a large pot, bring water to a boil and add the plantain chunks.

  3. Cook for about 15-20 minutes, or until the plantains are tender.

  4. Drain the plantains and return them to the pot.

  5. Mash the plantains with a fork or a masher until smooth.

  6. Heat the butter in a skillet over medium heat.

  7. Add the mashed plantains to the skillet and cook for about 5 minutes, stirring occasionally.

  8. Season with salt and continue to cook for another 5 minutes.

  9. Serve the mangu hot, topped with sliced red onions and fried cheese.
