  • 1 lb baby carrots
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, toss the baby carrots with olive oil, lemon juice, lemon zest, thyme leaves, salt, and pepper.

  3. Transfer the carrots to a baking sheet and spread them out in a single layer.

  4. Roast in the preheated oven for 20 minutes, or until the carrots are tender and slightly caramelized.
