Ingredients
- 4 medium beetroots
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tsp salt
- 1/2 tsp black pepper
Instructions

Preheat the oven to 400°F (200°C).

Trim the tops and tails of the beetroots, then peel and slice into wedges.

In a bowl, toss the beetroot wedges with olive oil, honey, salt, and black pepper until well coated.

Arrange the beetroot wedges on a baking sheet in a single layer.

Roast in the preheated oven for 30-40 minutes, or until the beetroot is tender and caramelized.
