Ingredients

  • 4 medium beetroots
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Trim the tops and tails of the beetroots, then peel and slice into wedges.

  3. In a bowl, toss the beetroot wedges with olive oil, honey, salt, and black pepper until well coated.

  4. Arrange the beetroot wedges on a baking sheet in a single layer.

  5. Roast in the preheated oven for 30-40 minutes, or until the beetroot is tender and caramelized.

  6. Remove from the oven and let cool slightly before serving.
