Ingredients

  • 2 pounds of yuca, peeled and cut into chunks
  • 4 garlic cloves, minced
  • 1/4 cup of olive oil
  • 2 tablespoons of white vinegar
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of dried oregano
  • 1/4 cup of chopped fresh cilantro

Instructions

  1. Bring a large pot of salted water to a boil. Add the yuca chunks and cook until tender, about 20-25 minutes. Drain and set aside.

  2. In a small bowl, whisk together the garlic, olive oil, vinegar, salt, black pepper, and dried oregano.

  3. Heat a large skillet over medium heat. Add the cooked yuca and the garlic-oil mixture. Cook, stirring occasionally, until the yuca is golden brown and crispy, about 5-7 minutes.

  4. Remove from heat and sprinkle with fresh cilantro before serving.
