How To Make Honey Mustard Chicken Pot with Parsnips

Ingredients
- 4 chicken breasts
- 4 parsnips, peeled and chopped
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a small bowl, mix together the honey, Dijon mustard, olive oil, lemon juice, garlic, dried thyme, salt, and pepper.

Place the chicken breasts and parsnips in a large oven-safe pot or casserole dish.

Pour the honey mustard mixture over the chicken and parsnips, making sure they are evenly coated.

Cover the pot with a lid or aluminum foil and bake for 30 minutes.

Remove the lid or foil and continue baking for an additional 10 minutes, or until the chicken is cooked through and the parsnips are tender.
