Ingredients
- 1 cup dried navy beans, soaked overnight
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions

Drain and rinse the soaked navy beans.

In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic. Sauté until the vegetables are softened.

Add the soaked navy beans to the pot, along with the vegetable broth, bay leaf, dried thyme, salt, and pepper. Bring to a boil.

Reduce heat to low, cover, and simmer for 2 hours, or until the beans are tender.
