  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (14 oz) cannellini beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup small pasta (such as ditalini or macaroni)
  • 1 cup spinach, chopped
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.

  2. Add the carrots, celery, zucchini, and red bell pepper. Cook for another 5 minutes, until vegetables are slightly tender.

  3. Stir in the diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.

  4. Add the cannellini beans, dried oregano, dried basil, dried thyme, salt, and pepper. Cook for another 10 minutes.

  5. Meanwhile, cook the pasta according to package instructions. Drain and set aside.

  6. Stir in the cooked pasta and spinach into the soup. Cook for an additional 5 minutes, until spinach is wilted.

  7. Serve hot with grated Parmesan cheese on top.
