Ingredients

  • 2 tbsp butter
  • 4 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup dry white wine
  • 1 tbsp all-purpose flour

Instructions

  1. Melt the butter in a large saucepan over medium heat.

  2. Add the onions and cook for 30-40 minutes, stirring occasionally, until they are golden brown and caramelized.

  3. Add the garlic and cook for 1-2 minutes more until fragrant.

  4. Add the vegetable broth, thyme, salt, and pepper and bring to a simmer.

  5. Stir in the white wine.

  6. In a small bowl, whisk together the flour and 1/4 cup of the soup broth until smooth.

  7. Stir the flour mixture into the soup and cook for 5-10 minutes more until slightly thickened.

  8. Serve hot and enjoy!
