How To Make Curried Butternut Squash Soup

Ingredients
- 1 butternut squash, peeled, seeded, and cubed
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of curry powder
- 1 teaspoon of ground cumin
- 4 cups of vegetable broth
- 1 cup of coconut milk
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

In a large pot, heat some oil over medium heat. Add the onion and garlic and sauté until softened.

Add the curry powder and cumin to the pot and cook for another minute, until fragrant.

Add the butternut squash cubes to the pot and stir to coat them in the spices.

Pour in the vegetable broth and bring to a boil. Reduce the heat and let simmer until the squash is tender, about 20 minutes.

Use an immersion blender to puree the mixture until smooth. Alternatively, transfer the soup to a blender and blend until smooth, then return to the pot.

Stir in the coconut milk and season with salt and pepper. Cook for another 5 minutes to let the flavors meld together.
