  • 1 small butternut squash, peeled, seeded, and cubed
  • 2 ripe pears, peeled, cored, and chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup coconut milk (optional, for garnish)
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until softened, about 5 minutes.

  2. Add butternut squash, pears, curry powder, cumin, and coriander to the pot. Stir well to coat the vegetables with the spices.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 20-25 minutes, or until the squash is tender.

  4. Use an immersion blender or transfer the soup to a blender in small batches, and blend until smooth.

  5. Return the soup to the pot and season with salt and pepper to taste.

  6. Serve hot, garnished with a swirl of coconut milk and chopped cilantro, if desired.
