- 1 small butternut squash, peeled, seeded, and cubed
- 2 ripe pears, peeled, cored, and chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon curry powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup coconut milk (optional, for garnish)
- Fresh cilantro, chopped (optional, for garnish)
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until softened, about 5 minutes.

Add butternut squash, pears, curry powder, cumin, and coriander to the pot. Stir well to coat the vegetables with the spices.

Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 20-25 minutes, or until the squash is tender.
