Ingredients

  • 1 whole chicken, about 4 lbs
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, quartered
  • 4 cloves of garlic
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black peppercorns
  • 8 cups water

Instructions

  1. In a large pot, add the chicken, carrots, celery, onion, garlic, bay leaf, salt, and peppercorns.

  2. Pour in the water and bring to a boil. Skim off any foam that rises to the surface.

  3. Reduce heat to low, cover the pot, and let simmer for 2 hours.

  4. Remove the chicken from the pot and strain the broth, discarding the vegetables and spices.

  5. Shred the chicken meat and set aside.

  6. Return the broth to the pot and bring to a simmer. Season with additional salt and pepper if desired.

  7. Add the shredded chicken back into the broth and let cook for another 5 minutes.

  8. Serve hot and enjoy!
