How To Make Carne en su Jugo (Meat in its Juices)

Ingredients
- 1 lb beef sirloin, thinly sliced
- 4 slices of bacon, chopped
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 jalapeño pepper, seeded and diced
- 2 cups beef broth
- 1 cup water
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 1 can of pinto beans, drained and rinsed
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
- Tortillas or rice (optional, for serving)
Instructions

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside.

In the same pot with the bacon fat, add the onion, garlic, and jalapeño pepper. Sauté until the onion is translucent.

Add the sliced beef to the pot and cook until browned.

Pour in the beef broth and water, followed by the cumin and oregano. Season with salt and pepper.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 45 minutes to 1 hour, or until the beef is tender.

Stir in the pinto beans and cooked bacon. Cook for an additional 5 minutes.
