Ingredients

  • 500g prawns, deveined and cleaned
  • 1/2 cup peanuts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1 inch ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon chili flakes (adjust to taste)
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Spring onions, chopped for garnish

Instructions

  1. In a bowl, combine soy sauce, vinegar, sugar, cornstarch, and chili flakes. Set aside.

  2. Heat oil in a pan and add garlic and ginger. Sauté until fragrant.

  3. Add prawns and cook until they turn slightly pink.

  4. Add peanuts, bell peppers, and onions. Stir-fry for 2-3 minutes.

  5. Pour in the sauce mixture and cook until thickened.

  6. Season with salt and adjust spice level if needed.

  7. Garnish with chopped spring onions.

  8. Serve hot with steamed rice.
