How To Make Fish in Foil

Ingredients

  • 4 fillets of white fish (such as cod or haddock)
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste
  • Fresh herbs (such as parsley or dill), for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Lay out four large sheets of aluminum foil on a flat surface.

  3. Place one fish fillet on each sheet of foil.

  4. In a bowl, combine the bell pepper, zucchini, onion, garlic, olive oil, salt, and pepper. Mix well.

  5. Divide the vegetable mixture evenly among the four foil packets, placing it on top of each fish fillet.

  6. Fold the edges of the foil over the fish and vegetables, sealing each packet tightly.

  7. Place the foil packets on a baking sheet and bake for 20 minutes, or until the fish is cooked through and flakes easily with a fork.

  8. Carefully open the foil packets, being cautious of the steam, and transfer the fish and vegetables to plates.

  9. Garnish with fresh herbs and serve hot.
