How To Make Lemon Chicken Salad with Crunchy Croutons

Ingredients
- 2 boneless, skinless chicken breasts
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper, to taste
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup croutons
Instructions

Preheat the grill or grill pan over medium heat.

In a bowl, combine the lemon juice, olive oil, salt, and pepper. Place the chicken breasts in the bowl and let them marinate for 10 minutes.

Grill the chicken breasts for about 6-8 minutes on each side, or until cooked through. Let them rest for a few minutes before slicing.
