- 1 fennel bulb, thinly sliced
- 4 cups rocket leaves
- 1/4 cup shaved Parmesan cheese
- 1/4 cup toasted pine nuts
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
Instructions

In a large bowl, combine the fennel, rocket, Parmesan cheese, and pine nuts.
