Ingredients

  • 2 chicken breasts, cooked and sliced
  • 2 oranges, peeled and segmented
  • 1/2 red onion, thinly sliced
  • 1/4 cup sliced almonds
  • 4 cups mixed greens
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled feta cheese
  • Salt and pepper, to taste
  • dressing:
  • 3 tablespoons orange juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the chicken, oranges, red onion, almonds, mixed greens, cilantro, and feta cheese.

  2. In a separate small bowl, whisk together the orange juice, olive oil, honey, Dijon mustard, salt, and pepper to make the dressing.

  3. Pour the dressing over the salad and toss to combine.

  4. Season with additional salt and pepper, if desired.

  5. Serve the chicken and orange salad immediately.
