- 2 large carrots, peeled and thinly sliced
- 2 oranges, peeled and segmented
- 1 ripe avocado, diced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- Fresh cilantro leaves for garnish
Instructions

In a large bowl, combine the sliced carrots, orange segments, and diced avocado.
