Ingredients
- 1 cup quinoa
- 2 cups water
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Rinse the quinoa under cold water to remove any bitterness.

In a medium saucepan, bring the water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15-20 minutes or until the quinoa is tender and the water is absorbed.

In a large bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, and red onion.

In a small bowl, whisk together the olive oil, lemon juice, cumin, paprika, salt, and pepper. Pour the dressing over the quinoa mixture and toss to coat evenly.
