  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness.

  2. In a medium saucepan, bring the water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15-20 minutes or until the quinoa is tender and the water is absorbed.

  3. In a large bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, and red onion.

  4. In a small bowl, whisk together the olive oil, lemon juice, cumin, paprika, salt, and pepper. Pour the dressing over the quinoa mixture and toss to coat evenly.

  5. Garnish with fresh parsley and serve warm or chilled.
