How To Make Pumpkin Biryani

Ingredients
- 2 cups of basmati rice
- 1 small pumpkin, diced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1-inch ginger, grated
- 2 green chilies, slit
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- 2 cups of water
- 2 tbsp oil
- Fresh cilantro leaves, for garnish
Instructions

Wash the rice and soak it in water for 30 minutes. Drain and set aside.

Heat oil in a large pot or pressure cooker. Add cumin seeds and let them splutter.

Add onions, garlic, ginger, and green chilies. Sauté until onions turn golden brown.

Add diced pumpkin, coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well to coat the pumpkin with spices.

Cook for 5 minutes, stirring occasionally. Add water and bring it to a boil.

Add soaked rice and stir gently. Cover the pot and cook on low heat for 15-20 minutes or until the rice and pumpkin are cooked.

Fluff the rice with a fork and garnish with fresh cilantro leaves.
