How To Make Pasta con il pesto alla Trapanese (Tomato and almond pesto)

Ingredients
- 350g pasta
- 2 cups cherry tomatoes
- 1/2 cup almonds
- 2 cloves garlic
- 1/3 cup grated pecorino cheese
- 1/4 cup extra virgin olive oil
- Salt to taste
- Fresh basil leaves for garnish
Instructions

Cook the pasta according to package instructions, then drain and set aside.

In a food processor, blend the cherry tomatoes, almonds, garlic, pecorino cheese, olive oil, and salt until smooth.

In a large pan, heat the tomato and almond pesto sauce over medium heat.

Add the cooked pasta to the pan and toss until well coated with the sauce.

Cook for an additional 2-3 minutes, stirring occasionally.

Serve hot, garnished with fresh basil leaves.
