Ingredients

  • 1 pound fusilli pasta
  • 2 medium zucchini, sliced
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 4 ounces goat cheese
  • Salt and pepper, to taste
  • Fresh basil, chopped

Instructions

  1. Cook the fusilli pasta according to package instructions.

  2. In a pan over medium heat, add olive oil and garlic. Cook until fragrant.

  3. Add sliced zucchini and cook until tender.

  4. Add cooked fusilli pasta to the pan and toss with zucchini.

  5. Crumble goat cheese over the pasta mixture and stir until melted and creamy.

  6. Season with salt and pepper to taste.

  7. Top with chopped fresh basil for added flavor.
