How To Make Vegan Butternut Squash and Caramelized Onion Pizza Recipe
This pizza features sweet and savory flavors, with tender roasted squash and caramelized onions.

Ingredients
- 1/2 butternut squash, peeled and diced
- 1 onion, thinly sliced
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/2 cup marinara sauce
- 2 cups baby spinach
- 1 pre-made pizza crust
- Vegan cheese, optional
Instructions

Preheat oven to 400°F (200°C).

Toss butternut squash with olive oil, thyme, salt and pepper. Roast in oven for 20 minutes.

In a skillet, cook onion over medium heat with a little olive oil until caramelized, about 20 minutes.

Spread marinara sauce over pizza crust. Top with cooked butternut squash, caramelized onion, and baby spinach. Add vegan cheese, if desired.

Bake for 10 minutes until crust is golden brown and cheese (if any) is melted.
